Zaiyu Hasegawa is one of the best chefs in the world right now, who’s cooking is a creative spin on the Japanese multi-course haute cuisine, known as kaiseki. For this one off collaboration exclusively for The Curated Plate, Zaiyu is joined Daniel Jarrett (Spicers Tamarind) and Donato Toce (Gelato Messina) in a unique, six-course dinner at Jarrett’s stunning restaurant, The Tamarind.
Hasegawa’s Tokyo-based restaurant, Den, holds some of the best awards in the restaurant industry including two Michelin Stars, ranks no. 3 best restaurant in Asia, is the recipient of the Chef’s Choice Award (Asia’s 50 Best Restaurants 2019) ranks no. 11 best restaurant in the world and also the recipient of the Art of Hospitality Award (World’s 50 Best Restaurants 2019).
Head Chef and partner of Gelato Messina, Donato Toce has become a pioneer of gelato, pastry and an innovator in his approach to food science. Since joining Gelato Messina in 2009 he, along with co-owner Nick Palumbo, has revolutionized the understanding of gelato, gelato cakes and mono-portions in Australia. Collaborating with Hasegawa and Toce is the classically-trained Jarrett. The trio will collaborate to create an exciting special six-course menu that will see the best expressions of their talents come together for an unforgettable dining experience.
Jarrett said that “The menu will be based on hero ingredients; seafood from Walkers Seafood Australia, seasonal-only local fruits and vegetables, as well as poultry and meat. We are covering land and sea, and trying to keep it all hyper-local”.
