Monique Fiso is fast becoming one of New Zealand’s favourite chefs. Starting her career at the tender age of 14, Fiso spent seven years in the restaurnats of New York, training at top Michelin-starred kitchens, The Musket Room, PUBLIC Restaurant, & Avoce.
In 2016 Fiso returned to New Zealand invigorated and creatively charged – and opened Hiakai, which means ‘hungry’ in te reo Māori. Hiakai is the vehicle for Fiso to explore traditional Māori cooking techniques and ingredients, while using her Michelin-starred, fine dining training and techniques. She elevates the famous South Pacific earth cooking practice, hāngi, into a finessed culinary artform.
Fiso is currently writing her first book and has also starred in Netflix’ first season of The Final Table.
